2007 Garagiste Chardonnay
The Garagiste label is reserved for exceptional parcels of fruit. This year's Chardonnay is 100% P58 clone from our Merricks Grove Vineyard. P58 is the Chardonnay equivalent to Pinot Noirs MV6 and is particularly successful when picked early where it expresses more minerality.
The wine was fermented in Barriques and Puncheons, with 35% being new Francois Freres Jupille, using indigenous yeasts. After the alcoholic fermentation it was sulphured to prevent Malolactic fermentation, thereby maintaining its natural acidity and minerality.
Matured for 11 months in barrel, the wine was bottled in February and aged for a further 8 months prior to release. The wine is pure and lean with citrus aromas and some matchstick complexity. Long and focussed on the palate, with refreshing natural acidity.

The Garagiste label is reserved for exceptional parcels of fruit. Made from two Dijon clones of Chardonnay (76&95) from the Yabby Lake vineyard in Tuerong. These Dijon clones are particularly successful here on the Mornington Peninsula, producing refined and concentrated wines at low alcohol levels.
Fermented in barrel, using indigenous yeasts, in a mixture of Barriques and Puncheons with 36% being new Francois Freres Jupil le. The wine was sulphured post primary ferment, preventing malolactic fermentation, thereby maintaining its natural acidity and minerality.
