
2009 Stone Axe Shiraz
It was a similar viticultural story in Heathcote to that which experienced on the peninsula, a cool vintage characterised by some extreme heat events. Similarly we harvested a couple of weeks later than usual with the grapes showing physiological ripeness at lower sugar levels. It was especially important to sort meticulously because we include a lot of whole bunches in our Shiraz ferments, with the level this year being 75%. We have been extremely happy with the characters that stem inclusion achieves in Heathcote Shiraz. During the ferment the winery is filled with wonderful aromas of raisins, cinnamon and cloves strongly reminiscent of hot cross buns, ironically coinciding with Easter. The wine was matured in 500L Puncheons with none being new as the savoury stems and sweet oak seem to fight against each other. The end result is a perfumed, juicy wine showing plum, dried herbs and spice with plenty of fine tannin and a lovely line.
