
2009 Chardonnay
Our first Allies Chardonnay is a mix of P58 and 76 clones from our Merricks Grove Vineyard. The P58 component was handled conventionally whilst the 76 component was initially whole bunch, wild yeast fermented in a small open fermenter, an ancient technique employed before the use of modern winemaking equipment. During open fermentation the 76 displayed intense cinnamon and nutmeg aromas which have been translated into the finished wine. After a week the 76 was pressed and completed its fermentation in barrel. The P58 was totally fermented in barrel, using indigenous yeasts and after the primary fermentation was, along with the 76, sulphured to prevent Malolactic fermentation. The wine is rich and complex with spicy aromas yet finishes with fresh natural acidity.
