
2007 Viognier Saone
A blend of Mornington Peninsula Viognier(95%) and Chardonnay(5%).
The Viognier is Montpellier clone, grown by Hugh Robinson in the Tuerong sub-region and Chardonnay from Clone P58 grown by us at the Merricks Grove vineyard.
Both varieties were fermented in old French oak Barriques using indigenous yeasts, which we find gives a trouble free fermentation and results in wines less overtly fruity and more complex. The wines were sulphured post primary to inhibit MLF and maintain freshness and vitality. They were then matured for a further 9 months with occasional lees stirring to increase complexity and mouth feel.
Today, the wine shows predominantly floral, blossomy aromas with some apricot notes. The Chardonnay has added greatly to mid palate richness and given the Viognier some length and grip. The term Saone refers to France’s Saone River, which connects the Rhone Valley to Burgundy, the historical homes of these varieties.

Both varieties were fermented in old French oak Barriques using indigenous yeasts, which we find gives a trouble free fermentation and results in wines less overtly fruity and more complex.
The wines were sulphured post primary ferment to inhibit MLF and maintain freshness and vitality. They were then matured for a further 9 months with occasional lees stirring to increase complexity and mouth feel.
