
2007 Pinot Noir
85% MV6, from the Merricks Grove vineyard and 15% Pommard and 777 clones from a nearby vineyard. We prefer MV6 for its intensity and savoury characters and this year we blended it with some Pommard and 777 for added structure and aromatics.
Each component was fermented separately in small open fermenters using indigenous yeasts. We aim for 17-21 days on skins depending on the vintage and tannin profile. The components were matured for a further 9 months in small French oak barrels with 15% being new Francois Freres Troncais.
This wine was bottled in January and shows the youthfulness, vitality and reserve that we look for in our young wines.
